then I shall graff it / with a medlar: Rosalind is punning on the soundalikes medlar/meddler. The medlar is a fruit which isn't edible until it has become soft, like a rotten apple, and Rosalind may mean that Touchstone is somehow like a medlar, soft in the head or prematurely rotten.
